"Traditional Balsamic Vinegar of Modena P.D.O." begins its life with the grape-harvest festival and proceeds with the boiling of the must with the open vessels put direct on the flames. After that it rests quietly in the attics. The barrels decreasing size, made with different woods are the tools which lead to the ageing and to the improving of "Balsamico". The must is poured from the biggest into the smallest barrels and is left for at least twelve years. After this time, a simple is taken from the smallest barre of each row and is submitted to the expert tasters committee for approval. If the product is 25 years old it can be given the name "Extra Old".
All "Traditional Balsamic Vinegar of Modena P.D.O." is examined and judged by a board of five expert tasters whose work is uncontestable. After that. it is onlu sold in special bottles-cruets, created by Giugiaro Design, each showing a numbered guaranteed seal. The Producers Consortium has worked hard to inform consumers for more that thirty years, and consumers can now get the real "Balsamico" in genuine cruets with the numbered seal. "Traditional Balsamic Vinegar of Modena P.D.O." has a range of scents and flavours which can please even the most demanding palates. It is suitable for many dishes, from the most refined and elaborate to the simplest ones, enhancing their flavour and adding the final touch. In Modena we have used "Traditional" for centuries, on boiled meats and vegetables and on egg dishes. More recently we have even used it on raw and cooked fish and on stewed and roasted meat. Some famous chefs have used it in new and different ways, with surprising results. It can enhance the scent of many tropical fruits, and it is delicious on peaches and strawberries previously prepared with sugar and lemon. Some drops of "Balsamico" on flakes of Parmigiano Reggiano cheese reveals the strength and potential of our local cousine.
